The fermentation lasts for about 15 days, using controlled temperatures in one year old oak barrels. . The lees are stirred weekly in the barrel during an ageing period lasting for about 12 months. |

| Tasting tips |
The wine is golden with green flashes, and of a light straw colour. A honey bouquet with touches of toasted bread and exotic fruit. On the palate it is very round with a slight touch of vanilla and has the charm of the fat typical of the Santenay wine, with a slight acidity that makes it a well balanced wine. |
